Herbed Corned Tuna Pasta w/ Garlic Toast...and a Happy Mother's Day! :)




Today's blog is special as I honor the woman who inspired me to write this foodie blog. 21 years after her death, there are times I wish she is still around for her to witness that I fulfilled the promise that I will
write down her recipes (a book later on) which she treasures deeply. I remember my mama as being a kind, shy woman who always aim for perfection in whatever she creates in the kitchen strict but fair she is honest enough to admit if she has flaws and constructive when praising or criticizing what I create as a beginner cook during my kitchen training for her. She loves pasta and I am sure she will be delighted how many variety of sauces I have created for her favorite dish if she were around. Mama, thank you for giving us life, love, guidance and for all the inspiration.

She never longed for fame and fortune, but she worked hard to raise us all giving the fine example of a hardworking woman despite her disability (mama got crippled on her left leg due to a taxi accident in 1976) her passion and creativity is something that is worth emulating for. She was a good cook, loves to crochet, make  curtains, knitted tablecloths and a loving grandma to her grandchildren. Her faith in God did not falter even when faced with the hardest trials life offered, she fought her life bravely and always tells us to persevere however hard times may be...Ethel - MAMA, LOLA,a loving wife, mother and grandma, we all miss you. love from all of us.

My Mama Ethel is the best cook! Our tecnogas oven was new at that time, taken at our house in San Andres which got burned in 1992. im the little one beside my big sis Sophia. 
I am the future cook! :)


Ingredients:

500 Gms. AMIGO SEGURADO SPAGHETTI, cooked.

1 can Century Corned Tuna

1 200 gms. Clara Ole Three Cheese Pasta Sauce

1 small can evaporated milk

2 stalks Fresh Basil leaf cut into ribbons

1 head Garlic (minced)

I red onion, chopped

1 red bell pepper, chopped

1 tsp dried oregano

1 tsp. dried thyme leaves

1 Stick Dari Creme Herb & Garlic flavor

1 package Gardenia Fresh bake bread

salt and pepper

1/2 cup water

Eden filled cheese, grated

Olive oil



mise en place while the pasta cooks.

for the toast:

Rub a clove of garlic before applying a spread of herbed butter. add chopped garlic pieces and basil. toast all sides for 5 minutes in the oven.



 How to make Basil Chiffonade:

Start by stacking the basil leaves. Roll them away from you, roll tightly as you can until you reach the end of the leaves and you have a tight little package. Slice finely until it forms little ribbons.






Procedure:



1. Cook AMIGO SEGURADO SPAGHETTI in briskly boiling salted water. After 20 minutes, drain and mix a tsp of olive oil in a separate bowl, set aside.

2. saute onion, garlic and red bell pepper. Pour in Corned Tuna, season with herbs, salt and pepper. add a little water. simmer.

3. In slow cooking heat, add the pasta sauce, evaporated milk and cooked pasta. Mix evenly. Turn the heat off once the milk is added to avoid curdling. Adding milk makes the sauce creamier.

4. Garnish with basil chiffonade and grated cheese. Done. 


 A gourmet style herb infused pasta dish using dried oregano, thyme leaves and fresh basil as aromatics. A budget friendly recipe that is easy to prepare and will surely delight not just a selective palette but also the  smart moms pocket. Happy Mother's day to all my mom friends and family! :)
