Adobong Dilaw (Chicken Adobo in Turmeric Sauce)


Another way of cooking adobo without using soy sauce.It is basically an adobo infused with the earthy and peppery flavor of turmeric called "luyang dilaw" or simply “dilaw” in the Philippine language.

If you are sometimes heavily overwhelmed with

the usual version of adobo, due to constant or over exposure to the dish, then this “adobo sa dilaw” is a very refreshing alternative.



Ingredients:

1/4 chicken parts

one cup chicken broth

chopped turmeric (yellow ginger) or turmeric powder

onion

garlic

vinegar

fish sauce

salt and pepper

bay leaf

olive oil

Procedure:




Marinate chicken in garlic, turmeric powder, salt and pepper for at lest 3 hours before cooking.

Saute turmeric in olive oil, garlic, brown lightly. Add onions and cook until translucent.
Add chicken cuts, i pierce each cut with knife to have an evenly cooked chicken up through the bones,salt and pepper,bay leaf. Cook over medium heat until the chicken renders its own liquid and oil.

pour in 1/2 cup vinegar, don't stir, sear a little and pour chicken broth.season with fish sauce.

Continue simmering on low heat until the chicken is fully cooked through and liquid has thickened and somewhat oily. Serve on top of cooked rice.
